The air is getting cooler and leaves are beginning to fall to the ground. If you’re like me you’ve probably been thinking pumpkin since the beginning of September. Everything tastes better with pumpkin in the fall!
I shared a fall inspired pumpkin recipe live on WWZM Channel 13 in Grand Rapids, Michigan on Tuesday. These Buckwheat Crepes are super easy to make and go great with Minerva Amish Roll and Maple Syrup Butter.
I prepared my batter and let it sit in the fridge overnight. In the morning I threw some butter on the skillet, made the crepes, spread the filling onto them and rolled them up. You can fold them into triangles as well. There’s so many fun ways to prepare crepes!
The pumpkin and ricotta goes great together and makes a delicious filling. You can amp it up even further by sprinkling some powdered sugar over the top of the rolled crepe.
