Halloween Funfetti Cake Mix Cookies Ingredients –
- 1 box of white cake mix, any brand
- 1/3 C. of vegetable oil
- 3 egg whites
- 1⁄2 C. Halloween sprinkles + extra for sprinkling on top of the frosting
Frosting Ingredients –
- 1⁄2 c. butter, softened to room temperature
- 4 c. powdered sugar
- 2 tsp. vanilla extract
- 5-6 tbs. milk (you may want a little more or a little less depending on how thick you like your frosting)
- Red food coloring
- Yellow food coloring
Preheat the oven to 350 degrees and spray your baking sheets with nonstick cooking spray. I also line my baking sheets with foil for super easy clean up but that’s optional.
#1. Combine the cake mix, oil and egg whites mixing well. Pour in the 1⁄2 cup of Halloween sprinkles and stir.
#2. Using a cookie scoop to get the rounded shape, drop the dough ball into your hand and roll into a ball. Place on the dough balls on the cookie sheet about 2” apart.
Frosting directions –
Using a hand mixer, combine the softened butter, powdered sugar, vanilla, and a few tablespoons of milk (start with 3-4). Beat until light and fluffy and add in another tablespoon or two of milk and continue to beat until nice a fluffy (about 3-4 minutes on high).
Coloring the frosting –
Add in 1 red drops and 2 yellow drops. Repeat depending on how orange you want your frosting.
Once the cookies are completely cooled, frost generously with the frosting and add the extra Halloween sprinkles on top of the frosting.
*Store in an airtight container up to 1 week. Makes approximately 1 dozen cookies.
